For the method of Natural Process, the harvested coffee berries are exposed to direct sunlight for about two to four weeks, it will reduce the moisture from 70% to around 10-12%, since the outer layer of the coffee seeds turns dried and hard, we will then remove the outer shell. Sun-dried beans have the sour and sweetness of tropical fruits, retaining the natural mellowness and rich flavor of coffee beans, and sometimes a little wine aroma!
The method of Washed Process is currently the most widely used method, we put the coffee seeds into the fermentation tank, and use the biological treatment method to dissolve the pectin through the fermentation bacteria. The pulp in the coffee fruit has been removed from the beginning, so there is no need to worry about mold and the overall quality is relatively stable. The flavor is not as peculiar as sun-dried beans, but the sour aroma and brightness are better!

What Are the Difference Between Light, Medium, and Dark Roasts?
1. Light roast coffee:It is roasted for the shortest amount of time so the coffee beans retain much of their original flavor, making it a more acidic roast. It's also rich in antioxidants and more caffeinated than the other roasts.
2. Medium roast coffee:The original flavors of single origin coffee can be preserved with fruity, nutty, spice or caramel sweet in the cup and multiple layers of taste in house blend coffee if roast medium.
3. Dark roast coffee:It is roasted the longest, creating a stronger taste that’s more smokey and bitter. It packs the least amount of caffeine and may boost the antioxidant glutathione.
