How to dehydrate cassava

Ingredients: cassava
Directions:
1. Choose full and long rhizome cassava.
2. Wash the cassava and cut it within 4 mm.
3. Place the cassava in the tray evenly, Laying thickness should be no more than 3cm.
4. Set the temperature at 45-55℃ for 2 hours,only dry no remove the moisture.
5. When the humidity reach 80%,Start drying and dehumidification for about 20hours.
6. The inside of the cassava chip is white with a slight yellow color. Hold it hard, that means the cassava has been dried
Different cassava thickness will have different dehydrating time, more thinner, the dehydrating time will be shorter. The dried cassava slices will regain moisture when they are in direct contact with the air, so a sealed package is required. If you use vacuum packaging, you can better preserve the color and aroma of cassava slices.
