How to dehydrate sausage

Directions:
1. The preserved sausage must be hang evenly and use dispersing airflow to dry. Put the sausage into IKE drying room.
2. To avoid deteriorated, the stage 1 is very important. The sausage need to be sterilized at the temperature 60℃ for around 2-3 hours.
3. Stage 2 is the fixing color period, setting the temperature at 52℃-54℃, humidity at 45%, drying time is around 4-6 hours. When the color of sausages is changing from light red to bright red and the casing for sausages become to shrink, the dehydrator must stop heating then let the hot and moisture air out of the drying room.
4 Stage 3 is the shrinking and shape fixing period. The drying time is around 11-12hours. In this period, the interior moisture content of the sausages is continue to decrease.
5. Stage 4 is the strengthen drying speed period, rising the temperature at 60℃-62℃, relative humidity is around 38%, drying time is 22-24hours. When the sausages humidity is less than 17%, the drying process is finished.
